Aquafaba is the starchy liquid drained from a tin of chickpeas (or left over from cooking dried ones). One metric cup (250 ml) weighs 250 grams or 8.82 ounces, close to water but slightly thicker thanks to dissolved proteins and starches. It whips into a foam much like egg white, so vegan bakers use it for meringues, macarons, mousses, and as a binder in cakes and cookies.
