Evaporated milk is unsweetened tinned milk with about 60% of its water removed, leaving a creamy, slightly caramelised liquid. One metric cup (250 ml) of evaporated milk weighs around 265 grams or 9.35 ounces. It is used in fudge, pumpkin pie, tres leches cake, and savoury sauces where extra richness is wanted without the sugar of condensed milk.

A standard tin holds around 410 g (about 1 1/2 cups), and recipes often call for part of a tin. Weighing in grams gives consistent results and stops you adding too much or too little liquid to a custard or pie filling.

Powdered and evaporated milk both concentrate milk solids, but powder is fully dehydrated while evaporated milk keeps about 40% of its water.
