Arborio is a short-grain Italian rice with a high starch content that gives risotto and rice pudding their creamy texture. One metric cup (250 ml) of uncooked arborio rice weighs 220 g (7.76 oz). Use this converter when a recipe calls for cups and you want to weigh the rice, or when scaling a risotto or dessert up or down.
Arborio's fat, round grains pack more densely in a cup than long-grain rice, so the same cup holds more grams than you might expect from other rice varieties. Weighing in grams removes that variation and gives you a consistent starch level every time.
