When a recipe calls for shredded mozzarella by volume, measuring by grams gives a more consistent result, as how finely the cheese is shredded affects how much fits in a cup.
Shredded mozzarella is light and airy, so a loosely packed cup and a firmly packed one can differ by 15 grams or more. Measuring in grams removes that guesswork and keeps pizza toppings and baked gratins consistent.
