Plain yoghurt (also spelt 'yogurt' in US recipes) is fermented milk with a mild tang and a soft, spoonable texture. One metric cup (250 ml) weighs around 258 grams or 9.1 ounces. It adds moisture and acidity to cakes, marinades, and quick breads, and works as an egg replacement (1/4 cup per egg) in tender bakes.
Yoghurt is sold in 150 g pots or 500 g tubs, but recipes call for cups or tablespoons. Converting between the two stops you over-pouring tangy liquid into a delicate batter.
