Gelatin is an unflavoured protein powder made from collagen, used to set mousses, panna cotta, jellies, and marshmallows. One metric cup (250 ml) of powdered gelatin weighs around 150 grams or 5.29 ounces. Most recipes call for it by the packet (one packet = 7 g = about 2.3 tsp) or by the tablespoon, where 1 tbsp weighs about 9 grams.

Too little gelatin and a mousse won't hold its shape; too much and the texture turns rubbery. Measuring by weight is far more reliable than scooping, which packs the powder differently each time.
